Abalone Chicken Pot with Matsutake Mushrooms

DEAR FRIENDS AND FOODIES

Did you try my last recipe, the abalone sashimi? Did you like it? Now as the weather turned colder I like to suggest another of my favourite dishes, abalone chicken pot with Matsutake mushrooms.


INGREDIENTS (4 PERSON’S PORTION)

  • 4 pieces Tell Mama South African abalone (8 heads)
  • 8 slices of matsutake mushrooms
  • 1/2 piece of chicken
  • 2 standard cups of rice
  • 1/2 ginger
  • 400ml water

SEASON WITH

  • Oyster sauce
  • Sugar
  • Soy sauce
  • Chicken powder
  • Corn flour
  • Dark soy sauce

DECORATE WITH

  • 1 Cup of spring onion

PREPARATION

  • Cut chicken into small pieces, dry and marinate it for 30 mins.
  • Wash & slice spring onion and ginger.

COOKING

  • Boil water in a pot, add rice into the pot when the water boiled.
  • Cook with medium fire until the water evaporate.
  • Disseminate chicken, abalones, matsutake mushrooms and ginger on top of the rice, cover the lid, cook with small fire for 20 mins.
  • Add spring onion at last, cook with strong fire for a short while.

TOP CHEF’S TIP

Stir the rice gradually during the rice cooking process to avoid over burning of rice at the bottom of the pot.
